Tasting Note
Concentrated red and black cherry, plum, earth, truffle and leather with spice and mocha; saline minerality, velvety yet firm tannins and a long, savory finish.

Food Pairing
Western: roast beef, venison, duck, mushroom risotto, truffle dishes, charcuterie, aged cheeses. Asian: Peking duck, char siu, braised short rib, miso-glazed eggplant, shiitake and tofu dishes.

Production Method
Hand-harvested; total destemming, limited intervention during maceration; aged c.18–24 months in oak (≈80% new).
