Tasting Note
Elegant, mineral-driven Pinot Noir: red cherry, raspberry, sous-bois, baking spice and subtle oak. Silky yet firm tannins with bright acidity and a long savory finish.

Food Pairing
Western: roast duck, venison, lamb, côte de boeuf, mushroom risotto, ripe washed-rind cheeses (Époisses). Asian: Peking duck, Korean bulgogi, char siu, miso-glazed dishes, mushroom ramen.

Production Method
100% Pinot Noir; full destemming, limited-intervention fermentations, natural yeasts, matured 18–24 months in oak (large proportion new barrels).
