Tasting Note
Evolved, powerful Champagne: dried apricot, honey, toasted brioche, and ripe tropical fruit, with saline, aniseed nuances, fine mousse and long, refined finish. (Max 50 words).

Food Pairing
Western: oysters, lobster, roast chicken, foie gras, aged soft cheeses. Asian: sushi/sashimi, tempura, seafood dim sum, delicate Chinese-style steamed fish, Thai coconut curries (milder).

Production Method
Vintage Champagne aged long on lees (~10 years) then double-aged many years post-disgorgement (c.12+ years); no malolactic fermentation reported. Bottle presented in a gift coffret.

Vineyard Info
Maison Gosset, founded in Aÿ 1584, now owned by the Cointreau family; specialist producer of long-aged, Grand Cru Champagne. Celebris is a limited, prestige cuvée.
