Tasting Note
Silky, tensile red: dried cherry, raspberry, rose petal, wild herbs, balsamic spice and flinty volcanic mineral. Fine, grainy tannins, bright acidity and a long saline finish.

Hand-harvested late October; spontaneous fermentation without selected yeasts; long maceration in large troncoconical oak vats; 18 months in 42‑hl oak vats then 12 months bottle aging.
