Tasting Note
Delicate ruby with orange rim. Aromas of red cherry, wild strawberry, herbs, smoke and volcanic mineral. Vibrant acidity, fine silky tannins and a saline, long finish.

Food Pairing
Western: roast pork, grilled steak, barbecue short ribs, aged pecorino, provolone. Asian: sweet-and-sour pork, Thai-style eggplant, grilled tuna with tomatoes and capers, Korean BBQ, Sichuan dishes.

Production Method
Hand-harvested late October; spontaneous fermentation in large oak troncoconical vats, long maceration on skins, natural malolactic; aged 18–24 months in large neutral oak 'tini', then bottle aging.

From the 'Sopra il Pozzo' parcel in Contrada Arcurìa, Passopisciaro (600–700 m). Volcanic 'rifusa' soils, bush-trained old Nerello Mascalese, low yields and high vine density. Producer: Graci, small family estate focused on Etna terroir.
