Tasting Note
Concentrated black cherry and plum with garrigue, graphite and spicy olive notes. Full-bodied, silky texture, fine ripe tannins and a long mineral-tinged finish showing earth and savory herbs.

Food Pairing
Western: roast lamb, braised short ribs, game (venison), aged sheep cheeses. Asian: Korean BBQ (bulgogi), char siu or hoisin-glazed pork, Sichuan-style beef, rich Thai or Malaysian beef rendang.

Production Method
Hand-harvested, low yields; grapes vinified separately with natural/indigenous yeasts, gentle extraction; matured in 228L oak barriques for extended élevage before blending and bottling.

Domaine de la Grange des Pères (Laurent Vaillé), established early 1990s near Aniane. Small, limestone-rich parcels (≈11–13 ha), low yields and a cult reputation for a single red and white bottling.
