Red cherry, raspberry, floral rose notes, earth and bay leaf with a dash of black pepper. Medium-bodied, lively acidity, fine-grained tannins and a long, mineral-driven finish.

Western: roast duck, beef bourguignon, lamb, mushroom risotto. Asian: Peking duck, miso‑glazed cod, shiitake stir‑fry, char siu (Cantonese roast pork).
Production Method
Hand-harvested Pinot Noir, mostly destemmed with cold pre-fermentation maceration; fermented in small vats and aged 12–18 months in French oak (c.40–50% new for 1er crus).
