Tasting Note

Golden straw colour with delicate mousse; zesty green apple, lemon sherbet and stone fruit, with toasted brioche, pastry and brazil nut from extended lees. Saline minerality and creamy texture lead to a long, precise finish.


Food Pairing

Western: dressed crab, lobster, barbecued sea bass with fennel & lime, cheddar & leek tart. Asian: sushi and sashimi, tempura prawns, Thai lime-and-chili seafood, Chinese steamed sea bass.


Production Method

Traditional method (méthode traditionnelle); whole-bunch pressed, fermented in stainless steel with a small portion in old oak, aged extensively on lees, bottled and late-disgorged for extended autolytic complexity.
