Tasting Note
Concentrated blackcurrant, blackberry and black cherry with graphite, cedar, tobacco and violet florals. Full-bodied, dense fruit, silky yet powerful tannins, mineral-tinged core and a very long, lingering finish.

Food Pairing
Western: grilled ribeye, braised short ribs, roasted lamb, aged hard cheeses (Gouda, aged cheddar). Asian: Korean BBQ (galbi), Cantonese roasted duck, Sichuan-style beef, umami-rich beef stir-fries.

Production Method
Hand-harvested, fermented in oak tanks with malolactic in barrel; aged ~24–36 months in new French oak. Minimal intervention; often bottled unfined/unfiltered.
