Tasting Note
Black cherry, cassis and plum with menthol, cedar, tobacco, dark chocolate and crushed stone minerality. Full-bodied, plush texture, silky yet firm tannins and a long saline, mentholated finish.
Food Pairing
Western: roasted ribeye, lamb, venison, duck confit, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ short ribs, red-braised beef, shiitake and soy braised dishes.
Production Method
Hand-harvested; temperature-controlled fermentation in stainless steel and concrete vats; co-fermentation includes Petit Verdot/Cabernet Franc; 18 months in French oak (≈60% new).
