Tasting Note
Deep red-violet with graphite, crushed stone, black cherry, plum and raspberry. Medium-bodied with silky tannins, mineral core, subtle cedar and smoke, bright freshness and a long, savory finish.

Food Pairing
Roast lamb, beef short ribs, duck à l'orange, mushroom risotto, aged cheddar or Comté; Asian pairings: Peking duck, char siu, braised beef with soy and star anise, mushroom hot pot, Korean galbi.

Production Method
Hand-harvested with rigorous selection; traditional vinification and élevage in French oak (71% new) for ~18 months; bottled May 2009.
