Tasting Note
Pure blackcurrant and Morello cherry with violet, cedar, tobacco and mineral notes. Silky, layered palate with polished, fine-grained tannins, lively freshness and a very long, mineral-driven finish.

Food Pairing
Western: roast lamb, grilled ribeye, beef bourguignon, duck confit, aged hard cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean bulgogi, Sichuan-style beef, umami-rich mushroom stir-fries.

Production Method
Hand-harvested; traditional fermentation with malolactic conversion; aged ~18–20 months in barrels (78% new oak); estate bottled.
