Tasting Note
Morello cherry, blackcurrant, violets, graphite and sandalwood; medium-full bodied, silky yet structured with fine, pixelated tannins, bright acidity and a long, mineral, tobacco-tinged finish.

Western: roast lamb, beef Wellington, duck, mushroom risotto. Asian: Peking duck, char siu (BBQ pork), Korean BBQ short ribs, beef rendang, Sichuan-style braised beef.

Production Method
Hand-harvested (19 Sept–13 Oct); fermented in vats, part in oak; aged ~16–18 months in 78% new French oak barrels; careful selection and blending.
