Tasting Note
Dense black-fruit core (blackberry, cassis, Morello cherry) with smoke, cigar box, roasted coffee, wet stone and floral spice; super-polished tannins, vibrant acidity and an epic, mineral-driven finish.

Western: roast lamb, beef (filet, ribeye), beef Wellington, mushroom risotto, aged hard cheeses (Comté, Manchego). Asian: Peking duck, char siu, Korean BBQ short ribs, shiitake or black fungus stir‑fries, rich soy/hoisin glazed dishes.

Production Method
Hand-harvested; fermented in double‑skinned stainless‑steel vats with malolactic fermentation, aged ~18–24 months in French oak (87% new in 2005), blended after élevage and bottled.

Historic estate founded 1525; owned by the Dillon family since 1935. Leader of Pessac‑Léognan with extensive clonal selection and an onsite cooperage; small production, high-quality élevage.
