Tasting Note
Perfumed black-plum, blackberry and dark cherry with dried sage, bay leaf, black pepper and cedar; dense, layered palate of dark fruit, cocoa and earthy spice, supported by velvety long-grain tannins and bright mineral acidity, finishing very long and perfumed.

Food Pairing
Western: roast lamb, braised short ribs, porterhouse steak, aged cheddar. Asian: Peking (roast) duck, Korean BBQ beef, Sichuan beef or lamb, Cantonese char siu, Malaysian beef rendang.

Production Method
Hand-harvested fruit from centenarian, dry-grown vines; small-batch fermentation and maturation for 18 months in hogsheads (86% French, 14% American; 26% new). Managed with organic/biodynamic practices.

Single-vineyard wine from Mount Edelstone (planted 1912); first bottled 1952. Produced by Henschke family, long-standing Barossa/Eden Valley house with generational stewardship and biodynamic/organic practices.
