Tasting Note
Elderberry, blackberry and fresh red plum with dried cherry, five-spice, chai and orange peel; coastal forest-like minerality. Juicy entry with firm, chewy tannins, balanced acidity and a long, chalky, savory finish.

Food Pairing
Western: roast duck, mushroom risotto, pork tenderloin, grilled salmon. Asian: miso-glazed black cod, soy-braised pork belly, Korean bulgogi, shiitake stir-fry, teriyaki salmon.

Production Method
Biodynamic farming; fruit from ~31 individual blocks, harvested and vinified separately in small lots; fermented in small batches and matured in French oak.
