Awards/Ratings

Tasting Note
Dense black cherry and blackberry, forest floor, leather and savory spice; firm, structured palate with ripe tannins, mineral lift and a long, slightly leathery finish (ageworthy).
Food Pairing
Western: roast lamb, duck (roast/pan‑seared), braised beef, game (venison/pheasant), mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, soy‑braised short ribs, Korean BBQ (bulgogi), savoury mushroom hot pot, miso‑glazed dishes.
Production Method
Traditional Burgundian red vinification (destemmed/partially whole‑cluster fermentation), matured in oak barrels for c.12–18 months (estimate 30–50% new oak) — vinified by the Hospices and bottled/aged by the négociant purchaser.
