Tasting Note
Concentrated, mineral-driven Chardonnay: lemon, green apple, sea-spray/saline, wet limestone, beeswax and chalky stone with bright, chiselled acidity and a long, saline, slightly textural finish.

Food Pairing
Western: oysters, lobster, roast chicken with cream, pork with beurre blanc, soft-ripened cheeses. Asian: sashimi/sushi, tempura, miso-glazed fish, Cantonese steamed fish, light Thai fish curry.

Production Method
High-density plantings; hand-harvested, whole-cluster press, barrel fermentation and élevage on lees with limited new oak and malolactic fermentation; long ageing in large barrels.
