Tasting Note

Crisp citrus and green apple with pear, white flowers and beeswax; stony, chalky minerality and lemon oil build to a saline, searingly mineral finish. Medium–full-bodied with focused tension and layered texture.

Western: roast chicken, lobster with butter, mushroom risotto, creamy cheeses (Brie, Comté). Asian: miso-glazed black cod, soy‑glazed salmon, delicate sushi/sashimi, tempura, and savory tofu dishes.

Production Method

Hand-harvested Chardonnay; whole-cluster pressed, settled, fermented on indigenous yeasts in 300–600L neutral barrels (0–10% new oak); malolactic conversion and ~18 months élevage, then blended and rested in tank. Organic vineyard practices.
