Tasting Note
Deep, intense ruby. Balsamic top notes with blackberry, blueberry and red florals, edged by clove, pepper and anise, alpine herbs and leather. Full-bodied, powerful yet elegant, with silky tannins and a long spicy-balsamic finish.

Food Pairing
Western: venison, wild boar, roast or grilled beef (steak, short ribs), braised lamb, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), Sichuan-style beef, char siu or hoisin-glazed pork, rich teriyaki dishes.

Production Method
Organic; hand-harvested; 60-day skin maceration; fermented and aged in French oak barriques for 24 months, followed by extended bottle ageing (c. 30 months). Vineyard worked with draft horses for low soil compaction.
