Tasting Note
Perfumed red-berry and floral nose (rose, violet, raspberry, cherry). Silky mid-weight palate with bright acidity, mineral lift, gentle spice and fine tannins; precise, lingering finish.

Food Pairing
Western: roast duck, filet mignon, veal, mushroom risotto, soft cheeses (Brillat-Savarin). Asian: Peking duck, miso-glazed salmon, char siu, shiitake stir-fry, teriyaki duck.

Production Method
100% Pinot Noir; mostly destemmed, indigenous-yeast fermentation 15–20 days in open vats; aged ~18 months in oak (≈15% new); minimal intervention, lutte raisonnée viticulture.
