Western: lobster, scallops, roasted chicken with cream sauce, seared foie gras, veal. Asian: miso-glazed black cod, prawn tempura, Thai coconut curry (milder), sushi (rich fish), Cantonese steamed fish.
Production Method
Hand-harvested, whole-bunch pneumatic pressing; native-yeast fermentation and malolactic in French oak; aged 10–18 months with limited new oak; typically bottled unfined/unfiltered.
