Tasting Note
Ripe cherry, black cherry and fig with vanilla, spice and subtle undergrowth. Velvety, concentrated palate with polished tannins, balanced freshness and a long, savory finish.

Food Pairing
Western: roast lamb, beef Bourguignon, duck confit, aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ (galbi), shiitake/miso hot pot or braised mushroom dishes.

Production Method
Hand-harvested Pinot Noir from a small parcel; ~20% whole-cluster fermentation, traditional open-vat vinification, aged in French oak (low new-oak percentage), bottled unfiltered (wax capsule on some releases).
