Tasting Note
Dense dark-fruited core of blackberry, black cherry and blueberry with espresso, mocha, licorice and spicy oak. Plush, concentrated palate with fine chalky tannins and a long, savory, chocolaty finish.
Food Pairing
Western: roasted or chargrilled beef, ribeye, lamb roast, venison, aged hard cheeses. Asian: Korean BBQ (bulgogi), char siu, Sichuan beef, beef rendang or spicy lamb curry.
Production Method
Hand-harvested old-vine Shiraz; open-top fermenters with rack-and-return and pump-overs; matured ~16 months in French and American oak hogsheads (predominantly new); bottled under Stelvin (screwcap).
