Tasting Note
Fresh, intense red-fruit core (Morello cherry, raspberry) with floral and smoky spice notes, silky tannins and a long, perfumed finish. Lively acidity and refined structure.

Food Pairing
Roast duck, coq au vin, mushroom risotto, beef bourguignon; Asian: Peking duck, char siu pork, miso-glazed salmon, grilled shiitake and soba.

Production Method
Hand-harvested; 20–50% whole-cluster; indigenous yeasts; 2–3 week fermentation in small open vats with punch-downs; aged 14–18 months in oak (≈25% new).

Vineyard Info
Maison Joseph Drouhin, founded 1880; owns the largest parcel (14 ha) of Clos des Mouches, purchased in the 1920s. Vineyard equally planted to Pinot Noir and Chardonnay; estate practices organic/biodynamic viticulture.
