Tasting Note
Inky dark fruit—blackberry, plum and blueberry—layered with clove, espresso, dark chocolate and sweet oak. Velvety but firm tannins, spicy finish and long, mouthwatering persistence.

Grilled ribeye, lamb chops, braised short ribs, aged cheddar; Asian pairings: Korean BBQ, Sichuan beef, char siu pork, Peking duck.

Production Method
Hand-harvested old-vine Shiraz; crushed/destemmed, fermented in open and closed fermenters, inoculated yeast, malo completed, matured ~15–16 months in French/American oak, minimal fining and crossflow filtered.
