Tasting Note
Intense red and black fruits (plum, cherry, blackberry) with violets, sweet spices, iodine and cocoa; fresh, chalky tannins, mineral-etched acidity, full-bodied yet balanced and a long, structured finish.

Western: grilled ribeye, roast lamb, braised short ribs, beef stews. Asian: Korean BBQ (galbi), Chinese char siu, Sichuan-style beef, Japanese teriyaki or yakitori with robust sauces.
Production Method
Hand-harvested; varieties co-fermented after cold pre-fermentation maceration; native-yeast fermentation in conical foudres; aged ~12 months in French oak (60% new, 40% used), 6 months in 600L barrels, plus ~18 months bottle aging.
Vineyard Info
Kaikén (Aurelio Montes project, established early 2000s) sources from the Boulder parcel in Los Chacayes at ~1,250m. Rocky, high-altitude terroir; Boulder is an icon, limited-production cuvée (approx. 3,714 bottles).
