Tasting Note
Crisp citrus, green apple and white-peach fruit with wet-stone/chalk minerality, saline snap and delicate white-flower spice. Bright, precise and lithe with a long, stony finish.

Oysters and shellfish, sushi/sashimi, ceviche; smoked salmon, roast pork, grilled chicken; spicy Thai or Szechuan dishes, Korean BBQ; fresh goat cheeses and vegetable tempura.

Production Method
Hand-harvested Riesling from limestone soils; short whole-bunch maceration, basket-pressing, ambient-yeast stainless-steel fermentation stopped to retain Kabinett residual sugar; aged on fine lees for months.
