Bone-dry, citrus-driven (lemon, lime) with white peach and Mirabelle, chalky limestone minerality, saline, zesty acidity and fine phenolic grip; long, precise finish.

Production Method
Hand-harvested fruit; short whole-bunch maceration, basket-pressing, spontaneous/native-yeast fermentation in stainless steel and large neutral vessels; aged ~1 year on lees before light filtration.
