Tasting Note
Bright red-berry and cherry fruit with floral notes, dried herbs and a hint of juniper; chalky minerality, fine silky tannins, lively acidity and a savory, peppered finish. Elegant, concentrated and persistent.

Food Pairing
Western: roast duck, pork loin, mushroom risotto, grilled salmon. Asian: Peking duck, char siu, miso-glazed fish, grilled shiitake or yakitori, lightly spiced Korean BBQ.

Production Method
Hand-harvested, strict selection from Morstein single-vineyard fruit; partial whole-cluster fermentation, native yeasts, matured in French/Burgundian oak (large barrels and some barrique), bottled unfined and unfiltered.
