Tasting Note
Luminous pale gold; florals (honeysuckle), brioche and gingerbread with bright, chiselled citrus (lemon, orange) and poached pear. Taut, saline finish with delicate spice and persistent minerality.

Western: oysters, cod with beurre blanc, lobster with beurre monté, ricotta‑stuffed pasta with zucchini flowers. Asian: fresh sashimi, tempura prawns, sushi, roasted eggplant with tahini or miso aubergine.

Production Method
Single‑vineyard Blanc de Blancs (1.84 ha); grapes hand‑picked, fermented parcel‑by‑parcel in small neutral oak barrels, malolactic fermentation not provoked, long lees ageing and extended bottle ageing before disgorgement.
