Tasting Note
Nose of white fruits, star fruit and citrus with licorice and basil. Palate shows pastry, stewed/caramelised fruit, hazelnut, gentle smokiness and herbs; chiselled saline finish with grapefruit zest and sea salt.

Western: oysters, lobster, shellfish, grilled meats (Greek brochettes), roasted poultry, truffle risotto, creamy cheeses, pâtisserie desserts. Asian: spicy Thai curries, Sichuan dishes, sushi/sashimi, dim sum (steamed prawns), teriyaki grilled fish, Korean BBQ.
Production Method
Fermented partly in small oak barrels, bottled by the traditional méthode champenoise and aged over a decade on lees; disgorged after long cellar ageing with a Brut dosage.
