Tasting Note
Inky, concentrated black fruits (blackberry, cassis), graphite, truffle, violet and toasted oak. Full-bodied with ripe, polished tannins, savory tertiary notes of leather and tobacco, and a long, mineral-driven finish.
Food Pairing
Western: roast lamb, braised short ribs, venison, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean bulgogi, beef rendang, shiitake and soy-glazed dishes.
Production Method
Hand-harvested; fermented in wooden vats with ~30 days maceration using pneumatic pigeage; aged ~18 months in 100% new oak; bottled June 2002; no fining or filtration.

La Mondotte (c.4.5 ha) owned by the von Neipperg family (Stephan von Neipperg). Small production (650–1,000 cases), low yields, acclaimed 'garagiste' estate now Premier Grand Cru Classé (B).
