Tasting Note
Concentrated dark cherry, plum and kirsch with garrigue, licorice and smokey cedar. Plush, ripe fruit with powdery tannins and a long, spicy finish.

Food Pairing
Western: roast lamb, braised beef, game, aged sheep cheeses. Asian: Korean BBQ (bulgogi), Cantonese roast duck with hoisin, Sichuan-style beef, rich teriyaki dishes.

Production Method
Hand-harvested old-vine fruit, co-fermented (wild/native yeasts), extended maceration (3–4 weeks) and ~12 months aging in concrete, large foudres and small French oak barrels.
