Tasting Note
Elegant, medium-bodied; blackcurrant, plum, violet, graphite, cedar and tobacco with stony minerality, fine-grained tannins, bright acidity and a very long, perfumed finish.

Western: roasted lamb, prime rib or beef, venison, aged hard cheeses. Asian: Peking duck, Cantonese roast pork/char siu, Korean BBQ short ribs, beef stir-fry with black bean sauce.
Production Method
Hand-harvested, destemmed; fermented in temperature-controlled vats with gentle extraction and extended maceration; aged 18–20 months in French oak (high proportion new).
