Tasting Note
Elegant, mineral-driven Pauillac: cassis, black cherry, graphite, pencil lead, cedar and violet. Silky, powdery tannins, bright acidity and a long saline-tinged finish with tobacco and spice notes.

Food Pairing
Western: roast lamb, beef Wellington, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, soy-braised beef, umami mushroom hot pot.

Production Method
Hand-harvested; plot vinification with temperature-controlled fermentation, malolactic fermentation and careful selection. Blended and aged ~18 months in French oak barrels (majority new).
