Tasting Note
Medium-full-bodied, with pencil-lead, blackcurrant, violet and graphite notes, saline minerality, fine powdery tannins and a long, elegant finish revealing cedar, spice and dark berry fruit.

Roast lamb, aged rib‑eye or beef, venison; mature hard cheeses; Peking duck, char siu or Korean BBQ, beef hot pot, grilled Wagyu.

Production Method
Hand-harvested, plot‑sorted fermentation with gentle extraction; malolactic fermentation in barrel; aged c.15–18 months in French oak (≈90% new).
