Tasting Note
Pure, elegant cabernet: cassis, blackberry, pencil lead, violet and tobacco with saline minerality. Medium–full-bodied, fine-grained tannins, precise acidity and a very long, perfumed finish. (Youthful; develops tertiary notes with age).

Food Pairing
Grilled ribeye, roast lamb, beef short ribs, aged hard cheeses; Asian: Peking duck, Korean BBQ (galbi), Cantonese roast pork (char siu), miso-glazed black cod.

Production Method
Hand-harvested, fermented and vinified with a record press-wine proportion (~17.5%); élevage in French oak for c.19 months; low-intervention cellar work and organic conversion practices.
