Tasting Note
Dense, opulent Pauillac: cassis, graphite and cedar with pencil-lead, tobacco, dark chocolate and floral lift. Ripe black fruits, smoky spice and glycerin-rich texture; powerful yet refined tannins and a very long mineral finish.

Food Pairing
Roasted lamb, ribeye or beef Wellington; aged cheeses (Comté, Manchego), truffle dishes; Peking duck, char siu, soy-braised short ribs, Korean bulgogi, miso-glazed eggplant.

Production Method
Hand-harvested, plot-by-plot vinification; fermentation in oak, concrete and stainless vats; ~20–22 day maceration, malolactic fermentation, aged 18–20 months in new French oak barrels.
