Tasting Note
Elegant Pauillac: cedar and pencil-lead with blackcurrant, violets, forest floor and tobacco; refined, grainy tannins, bright freshness and a long, mineral finish.

Western: roast lamb, beef Wellington, venison, truffle risotto. Asian: Peking or Cantonese roast duck, soy-braised short ribs, Korean bulgogi, rich Sichuan beef dishes.

Production Method
Hand-harvested; plot-based fermentation in oak and stainless vats with temperature control; malolactic in vats; aged 18–20 months in new French oak (estate cooperage); egg-white fining, then bottled.
