Tasting Note
Perfumed Pomerol with red and black cherry, raspberry, rose petal, mint and blood-orange notes; graphite and exotic spice underpin a layered mid-palate, ultra-fine tannins and a long, perfumed finish.

Food Pairing
Roast lamb, beef Wellington, mushroom risotto, seared duck breast, truffle pasta; Asian: Peking duck, char siu, Korean BBQ short ribs, braised beef, miso-glazed aubergine.

Production Method
Hand-harvested; destemmed and fermented in temperature-controlled vats; matured ~18 months in French oak (≈50% new); minimal intervention; no chaptalisation reported for 2021.
