Tasting Note
Concentrated blackcurrant, black cherry, cedar, pencil-lead and tobacco; lush, glycerinic texture with ripe, silky tannins, mineral grip and a very long cassis finish. Developing tertiary leather and cigar-box notes.
Food Pairing
Western: roast lamb, ribeye or porterhouse steak, venison, beef short ribs, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), braised beef in soy/ginger, rich black pepper Sichuan dishes, Japanese wagyu yakiniku.
Production Method
Traditional Bordeaux vinification: temperature-controlled fermentation, malolactic in barrel, aged ~18–20 months in French oak (significant new oak), strict selection from L'Enclos.
