Tasting Note
Explosive blackcurrant and blackberry core with truffle, cedar, smoke and sandalwood. Luxurious, velvety texture, ripe fruit and polished tannins, finishing very long with mineral and graphite notes.
Food Pairing
Western: roast beef, rack of lamb, venison, duck with truffles, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, beef rendang, miso-marinated grilled beef.
Production Method
Parcel-based vinification; fermented in stainless steel vats (6% press wine added); aged ~18 months in new French oak barrels.
