Tasting Note
Concentrated blackcurrant and blackberry with graphite, cedar, tobacco and menthol notes. Firm, super-fine tannins, bright minerality and long, anise-tinged finish. Shows both power and finesse.

Food Pairing
Western: grilled ribeye, roast lamb, beef Wellington, venison. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan beef, Cantonese roasted meats.

Production Method
Hand-harvested, fermented in temperature-controlled vats, matured ~16 months in new French oak; estate moved to organic practices in 2017 (certified later).
