Tasting Note
Dense blackcurrant and black cherry framed by cedar, tobacco, graphite and truffle, with leather, spice and earthy sous-bois notes. Plush, layered palate with sweet, powdery tannins and a long, mineral finish.

Food Pairing
Roast lamb, beef Wellington, aged steak, game and hard cheeses; Asian pairings: Peking duck, char siu, Korean BBQ (bulgogi), braised short ribs, mushroom hot pots.

Production Method
Traditional Bordeaux vinification: destemmed fermentation in temperature-controlled vats, long maceration and élevage in French oak barrels (heavy new-oak usage reported) for c.18–20 months.
