Tasting Note
Deep black-fruit core (blackberry, cassis) with pencil lead, tobacco, Asian spice, espresso and cedar. Full-bodied, firm ripe tannins, dense texture and a long mineral-tinged finish.

Food Pairing
Roast lamb, beef ribeye, duck confit, mushroom risotto; Asian: Peking duck, char siu, Korean BBQ, braised beef short ribs, rich Sichuan-style beef.

Production Method
Hand-harvested; traditional vinification with extended maceration and fermentation; aged ~18–20 months in French oak with a high proportion of new barrels.
