Tasting Note
Dense black-fruit core of blackberry and plum with violet, fennel/anise and cedar. Silky, velvety tannins, bright acidity and a mineral-saline undertone; long tobacco-tinged finish.
Food Pairing
Roasted lamb, bistecca alla fiorentina, beef short ribs, mushroom risotto; Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ beef, soy-braised beef or bulgogi.
Production Method
Hand-harvested Merlot; partial fermentation in concrete and steel, long maceration, aged ~18–19 months in French oak barriques (reduced toast). Minimal intervention, organic viticulture.
