Tasting Note
Concentrated dark plum and blackberry with espresso, cedar, vanilla and tar; floral lift (iris). Juicy, full-bodied, layered tannins and a long, mineral finish.

Western: grilled ribeye, braised short ribs, venison, truffle dishes, aged pecorino; Asian: Korean BBQ (galbi), char siu, Peking duck, rich Sichuan beef, wagyu yakiniku.

Production Method
Hand-harvested Merlot from a 2.5 ha plot; long maceration and fermentation in concrete and stainless steel; aged ~18 months in new French (barrique) oak.
