Tasting Note
Dense, velvety Merlot with blackcurrant, blackberry and violet notes, sandalwood and graphite minerality; polished yet chewy tannins, savory olive/iron undertones and a long, sapid finish.

Food Pairing
Western: roast lamb, braised beef short ribs, mushroom risotto, aged cheeses (Parmigiano, aged cheddar). Asian: Peking duck, Korean BBQ (bulgogi), hoisin/char siu pork, miso-glazed eggplant or grilled wagyu.

Production Method
Fermented and macerated in concrete; aged ~16–18 months in French oak barriques and gres (stone) amphorae.
