Tasting Note
Perfumed black cherry and raspberry with notes of truffle, violets, anise and graphite; silky, ripe tannins, bright freshness and a long, mineral-tinged finish.

Food Pairing
Western: roasted lamb, beef tenderloin, duck, mushroom risotto, aged cheeses (Comté, Manchego). Asian: Peking duck, char siu, beef bulgogi, shiitake soy-braised dishes, rich ramen with braised pork.

Production Method
Hand-harvested Merlot; fermented in small stainless-steel vats with gravity flow and malolactic fermentation; aged 14–18 months in French oak (approx. 50–100% new barrels).
